Flourless Chocolate Tortes
Ingredients
Tortes
- 1 cup Hershey’s semisweet chocolate chips
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 3 large eggs
- 1/2 cup Hershey’s cocoa powder
Glaze
- 1 cup Hershey’s semisweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 375F. Lightly grease 8 torte or quiche 4-inch metal pans with cooking spray. Cut parchment paper into a circle to fit bottom of pan and lay it in the bottom of the pan and grease the bottom again. Set pans aside.
- To make the tortes put the chocolate and the butter in a microwave safe bowl and heat until the butter is melted, and the chips are soft. Stir until the chips and butter and combined. You can also melt the butter and chips together in a saucepan on the stove on very low heat. Use a spatula to transfer melted chocolate and butter into a medium sized mixing bowl.
- Stir in the sugar, salt and vanilla into the melted chocolate and butter.
- Stir in the eggs until fully combined. Stir in the cocoa powder.
- Spoon the batter into the prepared pans.
- Bake the tortes for 25 minutes. The tops will form a thin crust and should register 200F on a thermometer.
- Remove from oven and allow to cool in the pans for 10 min.
- Loosen the edges of the pan with a knife and put them on a plate. The edges may crumble a little bit, but this is fine because glaze will cover. Allow to fully cool before glazing.
- To make the glaze place the chocolate chips in a heatproof bowl. Heat the cream in a saucepan on low until fine bubble arrive along the edges of the pan. Pour the hot cream over the chocolate chips and stir to combine. Let rest for 5 minutes and stir again more vigorously until the chocolate is completely melted and smooth.
- Spoon the glaze over the tortes allowing it to drip over the sides slightly. Garnish with blackberries or your choice of berry and a sprig of mint.
